A difference is because the media (coco) doesn't have any nutrients in it at all and will drain much faster than a peat-based soil, which generally have some nutrients in them. If you're using a totally sterile coco mix then you're more in the clear because the pathogens that cause damping off live in the soil. Seedlings in coco need less water, more frequently, than seedlings in a peat mix tend to.

I've found that bottom-up watering also makes it a bit easier to not saturate the soil surface, and haven't had any plants damp off since switching to that.
