There's no problem with 11 hours of light. There would only be a problem with more than 11 hours of darkness. Flowering is based on the length of the night, not the day. Better to get right into the habit of an 8 hour dark cycle instead of delaying it.

How many lights/rooms do you have? You can start the first flower 1.5 months in, and take some clones from the best looking ones. After you grow the clones out a bit, you can start your second flower after another 1.5 months, so 3 months after your start from seed. That's the only way I see...

Some plants will get up to eight weeks old before they show sex, but usually it's between four and six weeks. There's nothing wrong with flipping to 12/12 a bit to get them to show and the putting them back on 18/6 to resume veg.
