We have a very special French Culinary type meat chicken that is a slower growing and more flavorful bird thay has been raised in the U.S. since the switch to the fast growing Cornish-Cross birds in the 1960's.
As a small all-natural farmer these birds were bred by a local hatchery and I grind and mix our own feed free from genetic modification, meds and other crapola
That said, I know that they have received feed I personal mix and grind with proper living conditions necessary to raise the tastiest chicken available.
Average price $20.oo to $25.00 $4.50 lb....
Possible distribution Front range mid Jan, or sooner if you come and get em

It be most important to allow a full bleed out
A perfect scaled makes for a perfect
Pluck a minute too long or short is huge
Done so many got it down

FYI ya all...
Best to cure/chill for 48 to 72 hours before freezing..
Allows for tissues to fully rest I reckon...
one hour fifty minutes 24 chickens scalded, plucked, gutted, cleaned and currently chilling...
I do the scalding and plucking friend guts and cleans.
This fella does a top notch job. From the time blood is fully drained to chill less than 10 minutes.....

Telling ya farmers it is a LOT of work
My all guy gay gutting crew is wore out..
they were saying they would much rather trim weed than cut em open clean em out, dry and bag...
But the results are amazing. These fella's did a great job, each chicken is a master piece except the first 4 I over scalded on the first scald, water too hot...
hot bath, then off to bag, then deliver 140 dozen eggs for Aspen delivery...
Done deal for another year..
