Emulsifying distillate

Hey guys,

I’m new here, so pls forgive me if i deviate from etiquette. Working with some distillate and trying to get it to bind into corn syrup. I tried soy lecithin and varying ratios unsuccessfully. I used VG in a double boiler at 225°F and mounted the solution into a simmering simple syrup, which seemed to work but I was still left with a fair amount of residue stuck to the cambro. Any tips on getting distillate into corn syrup or sugar based liquids?

I am trying to infuse simple syrup. I use some gums like perfected xanthan and 210S (molecular gastronomy). I have had success but the folks at grass city want a transparent syrup. I can only do a translucent syrup. The gums provide a bond between the oil and water (hydrophilic). Worth looking into it you want.
