I think last week or so I asked what was coming off the stock(the stipules). Now the new growth in the back is what will determine is my plant is a male or female?

Yes those are preflowers. Hard to tell if male or female from the pic though.

No, mere days. Watch for two white hairs to emerge or it begins to form clusters of preflowers in the same spot. The male preflower will also develop a small stem and the flower will hang down. You see clusters in one spot or a stem form on it kill it unless you want to fertilize everything in proximity to it.
