So today I was moving around one of my plants and accidentally super cropped one of my plants I am 1 week into flower and was wondering if this will stress it out to hermie on me. She didn’t snap all the way it litterly super stopped on me and she was holding vertical I used the string to keep her from snapping anymore and planned on not doing anything except watering them for the next week or so I just fed today.

You should be fine. As long as the top of the snapped piece doesn't wither quickly, it will recover fully. This isn't typically the damage that makes plants herm, more like long term stress from nute imbalances or other chronic problems. A snapped branch won't cause any problems.
