Quick question about my ph

I ran my tap water through 2 brita filters and adjust my ph to 6.7 with apple cider vinegar.

When testing my ph after the water has sat for a bit, the water fresh from the jug was 6.3, and the water I let set out was 7.3.

My question is which is more important, the ph at the time of watering, or what it will drift up to once it interacts with the oxygen in the soil?

You need real pH down made for plants, vinegar or lemon juice doesn't work as well.

I know, but it's all I have at the moment other than the sulphuric acid that I normally use, but I didn't want to use that stuff in an organic grow.
