Man, I miss sliders. I would punish a Crave Case right now like I caught it breaking into my house. 
But I also miss legit Philly cheesesteaks, too (Civera's Deli, in particular). And Baltimore's crabs. And Katz's. And Gino's East (and Chicago dogs!). Bagels aren't the same outside of NY/NJ. And Steak 'N Shake!
I feel like essentially all regional dishes are made well by some places, and some places just go through the motions.
There are exceptions to that, though. Pittsburgh's general fondness for putting fries on salads and in sandwiches is odd, and Primanti Brothers tasted like cigarette butts both times I had it. Still a fantastic city though.
