Prove to whom? The police/DA or your doctor? I've had lots of conversations with my own doctor and attorney over this issue and it's actually fairly simple,
especially once you start making medibles, oils and the like. For example, I've started making oil, and it takes easily about a quarter pound of product to make 20g of oil. Knowing that, my doc has made notes according in my private file, which should I ever have legal issue/need, as part of our agreement he will use to help in my defense 24/7.
Also, as far as what's written on my recommendation, my own doc's made it in agreement with what my attorney wants--no mention of numbers on the actual recommendation itself, it just says that he recommends cannabis for my conditions. What we've discussed privately can only come up with a subpoena. This is specific to my own personal need. If I were growing for others a la coop, collective or dispensary scenario (which is the ONLY reason anyone's legally growing 99 plants, which is an insane number of plants to handle by yourself if you've got much in the way of physical issues IMO), then
they have to prove their own need, you need prove you're acting in compliance with the law.
The main thing you've really got to remember, and a consultation with a good attorney will keep this in the front of your head, is that ALL of this is an issue only when you go to court. Avoid going to court and you avoid having to prove anything.

Know the laws, both state and local.
Consult your OWN attorney, don't rely on what some guy for who won't be there with bail for you has to say.
If you're really going to push the envelope, have bail on hand (count on $10K).
Get an attorney on retainer (I recommend someone local who's familiar with the courts and players).
Use a GOOD doctor, not just some rec-writing fiend pot doctor.
Know that all of these local ordinances and codes can be, will be and often are changed at practically a moment's notice (in relation to a growing season), so it's smart to stay on top of all of that stuff.
