today i noticed something weird with my plants main stem, its rough to the feel like pretzel salt. does anyone know what caused this?

Totally normal. Roots will sprout out of each white spot if you put dirt up against it. No worries and a good sign of robust growth.

Imo you have high humidity around the base of the stem indicating that airflow to that area is poor.

what can i do to can this? lower my fan?
