Looks fine to me. it will be slow at first, until it's root system gets established.

What's your humidity at? Seedlings require high humidity levels between 65 and 70 percent. These high humidity levels are needed because the root system is NOT established and humidity allows water intake through the plants' leaves.

Take a small clear plastic cup, spritz it with water and place it over the seedling. It will raise the humidity.

Not enough light. She is stretching to get to the light. Putting her limited energy into stem growth and not foliage. Photo/Auto,,, does not matter at this point when the stretch is on. Needs a tad more light. And keep the humidity up. She will settle down.

Current grow at 7 days. 14 day update in the morning. She's a photo and smaller than I like at her stage in life.

She does look a little on the slow side, it may just be her way...
I just popped 40 of the same seeds in the same soil temp and conditions and a handful of them are just so slow compared to the others we're talking only 1 set of true leaves like your little one and the rest have there 3rd set of true leaves coming through, sometimes it's the soil sometimes it's the grower and sometimes it's the strain... I will say your edge soil looks awfully dry don't be afraid to get your spray on with the early stages, really soak the soil. It will allow your nutrients and microbateria to really mix and do there thing to help the plant later on..
It doesn't look like soil retaining moisture will be an issue for you, So no need to worry about waterlogging your soil or root rot.

Na stick with her she's nearly developed her root system enough to sustain healthy water absorption, many don't realise that most of a young seedlings water absorption actually relies on transpiration a collaboration between water evaporation from the leaves which triggers a water uptake in the root system if your humidity is too low this will hugely effect the root growth and consequently the speed of growth of the plant.. this is only worth considering in the early stages like the first 2 weeks, if you can get a clear plastic cup or pot poke 3 or 4 holes in the top and two in the bottom this will increase humidity to a better level and maintain the water retention in the area under the cup.
I had this issue with 2 of mine last week but I used some nutrients to promote root growth and a plastic cup now both have there 3rd set of true leaves coming through.
