These are just over 3 weeks old and I would say in the veg stage
Would you say they're doing okay and when should I starting topping and training ?

Appreciate it. Thanks for the advice I'll start topping first thing in the morning. Do you recon I should snips the bottom leaves ?

Not at this point, I'm not a big proponent of plucking leaves on young plants, I will do it, to open up new bud sites, but I prefer tucking to plucking. As the plant gets a little bigger, then the careful removal of a few leaves can be helpful.

I've topped them all now. So is the best thing to wait till the two branches come out on the side then start tying them out the way ?

Yes, that should work, as the branches one node under what you topped grow laterally it’s a good time to start LST, and if the laterals are shaded by the fan leaves where you topped then you can consider taking those fan leaves off if necessary.
