Grow bro there is so much to that question. You do not want to top without knowing what it is going to do and what you are going to do about it.
All I can share is my methods and I have a particular system as I have a bad back and keep the plants smaller so I can move them in and out of my tents.
At this point your plant is ready for topping and training, right after you get nutrients and get them in the plant. The reason everyone is helping you is organic growing has a schedule you need to keep and it includes the knowledge that what you need today should have been put in the pot 10 days ago. It takes that much times for the organic nature of the grow to breakdown bits and turn them into nitrogen, phosphorus and potassium plus micro nutes.
For training I do a few things. You have already stretched out the plant more than I like but you can work with it.
First thing is for next time
5-7 days before you want to top take the most dominant fan leaf and cut it off. It will have 5 or 7 leafs and will be the biggest with the most. If there is a smaller one above it still take the biggest with the most.
This is going to send a hormone signal that fans leafs are not working throw more nodes out. This results and a rush of new growth lower down that training will turn into new plant stems and buds
Top the plant. Find a tutorial if you have questions.
Also never asked how big is the pot and is this the final pot cause after you start training it's gunna get stuck in. I recommend 3 gallon pots. I recommend 3 gallon fabric pots.
Top the plant and then lasso the top and pull the plant top sideways. Gently sideways.

You can see the tops are being pulled over to the side of the pot. Fabric pots are easy to put a hole in to throw green wire over the top and tie off.
Then you start pulling the lower side stems out away from the main stem. Pull them out and tie them off. Any that are already pointing up ( most of yours ) can be coaxed down or turned with plant training fixtures.

You can see the inner part of the plant is opened up to the lights. This causes growth.
Training is constant daily .

See how far they are out? Now we let them turn up. Let all these stems start to turn up but keep the stem way out away from the main stem. Should turn into an arc of stems all around the plant

Now when your plants have made a few inches turn to 12 12 lighting to initiate flowing and wait for puff balls.

Now each one of those puff balls is going to stretch and climb. Let em go but we need to watch the lights. If the suddenly get a burst and start to stretch get some more light on them. If they are making a flat mess stacking up less light.
These techniques take time to master.
This is the 2 plants right now current grow.
