there are a different kind of ph meters. do you have a link. If its the powder calibration ph than yes you do need distilled water. You dont have to take the probe out. Just put some storage solution inside the cap. I have a sponge in the cap and i make the sponge wet with the storage solution.

I know you dont have that bent aluminum, but if you bring the intake closer to the bucket then the cold air will still get the temps down. FYI, you can buy that bent aluminum with a 4" connector at homedepot for 10 bucks also, your ph meter needs a ph calibrator not distilled water. Depending...
