Yea, each machine is different. Record data every 15-30 minutes that's what taught us the most I'd say. Then try to control your different variables even down to the trim or material level. Isolate a single one and methodically make changes and record the results. 3 months of good data can lead...

Those hydrosols contain terps..usually high in pinene (which you would be able to taste and smell). That's a nice blend of water and terps, great for medicinal creams.

And does your water have more of milky look to it or an odor to it? If so its more than just water...those are hydrosols.

Freeze dry or bake to get the water out is the recommendation from Apeks. Bake if you if are making a decarb oil. Freeze dry if you are not.
