200 amp load center, you must be in an industrial area. Murrays work great, squard D is fine too. Either of these will do u well. Very popular.
A main breaker in your load center is ideal also. 42 space would probably fill ur needs

Siemens and C-H are the better choice when it comes to 3-phase panels IMHO. As Hiboy said, make sure it has a main breaker.

Forgot about siemens, yes top notch for sure. Probably the best out there. Only supplyhouses or online will carry them, dont look for them at your local home depot or lowes.

Thanks guys, the MLC is a siemens, so I'll probably go with one of those. Would you recommend any heat or override sensors, where's a good place to look into accessories like that?

You can hard wire a 200A 3-pole contactor, but that's going to be about $500 to a $1000. If you mount a NEMA enclosure 18"x18"x8" beside the loadcenter, then run some EMT or couplers, mount smaller contactors for each of the 240V or 120V loads you want to control. A Ranco or Johnson Controls makes a good high temp shutoff. Add a PLC and add some sensors to control various settings.

If you're comfortable with electrical work, you can do most, if not all of the work.

Here is what a 200A 3-phase loadcenter would look like. It was built for 48 x 600W ballasts.
