Hello first time poster here.

Just flipped to bloom last week and plants are growing like,, well , weeds

Question about what exactly I should cut when defoliating. Do I trim the big fan leaves? Or other growth areas?
What about under the canopy?

I have two plans in 3x6 grow space and doing the SOG grow method.
Added video too.

Would LOVE advice and feedback

First welcome to the farm!
Your grow says to me you are educated on the process.
Many cut everything under the net ! No joke..
You may need to add another scrog or tuck and weave a bunch during/after stretch.
Others with much more knowledge and help will be along soon.
Nice grow man!

Welcome aboard!!

Usually defoliate before flip to 12/12, and around 3rd week of flower, but there are probably as many different styles as there are growers

They don't look overly bushy to me at the moment.
Looks like you've already done some pruning on the lower half of the plants.
That looks good. It promotes good airflow and removes the sucker branches that won't make it up high enough to produce good buds.

Let 'em just grow for a while. You don't need to do anything to the fan leaves until they start blocking light to the bud sights.
Even then you can get away with just tucking them out of the way for a bit, unless they get really unruly...
