Looking for feedback or tips, this is my first attempt at any type of training especially something so flat like this. Is this roughly what you would want to train towards? Also should I maybe have defoliated the top canopy better?

It looks good, depending on the structure an growth pattern of the stain. I have a Skunk #1 an my cloned BritCoin here.

Fer the space in the tent in about 2-3 weeks I'll have a clearer picture, probably pop a net an train on shear principle shortly.

A lot of the training we do is dependant on the lights you are using.
Bar lights usually give a more level light pattern that a panel light. Panel lights have a hot spot that you will have to deal with.
If you have bar lights your pattern looks excellent and you can stop reading here.
Of you have a panel with a hot spot I recommend that you use a light measuring tool and adjust your grow for a " virtual canopy"
This means you pull flower tops up and down to ensure that all of the flowers are " in the zone " for good light.
Here is a photo of a dual light pattern that was trained to use the 2 hot spots. There is a vertical hight difference of 4-6 inches but the light pattern is higher so the lower buds are actually withing a few thousand lux of the rest of the grow.

The tall flowers are at a lower power section of the pattern which is on the outside of the light pattern. The sunken vegetation in the middle is where the hot spot Is. Reviewing the post from that pic most of the buds were at 62,000 lux with the lowers at 58,000 lux.
Works for me.
