So at the start of my grow my nodes were even all the way up pretty much 15 nodes up now they're starting to offset and be about an inch apart. Does anybody have any explanation for this...

Thats fine, its pretty much how every clone looks. No harm, no foul. When it happens from seed or after a bit of space as you describe, it's simply how the plant has grown / stretched. It won't reduce yields or invite disease or anything bad.

Mature plants grow uneven alternating nodes. Young ones grow symmetrical.

Mine looks the same, also not a clone... but i'm wondering how can you top it if the two nodes don't meet in the middle? It wont be able to shoot off in two now right?

I just cut it above a branch point, which is also a node.

That's why clones alternate. They are the same age as the mother plant, and that's usually old enough to alternate.
