I know Marijuana can be used many ways in cooking but what can it replace in general as far as cooking?

I do a bit of cooking and I don't think there is any herb that Cannabis could substitute for. The taste is just not good. The object of the game seems to be to hide the taste as best you can.

Ah, then it can subsitute for Kale.
