They do seem like they are going to be fine, in the future I'll need to allow a little bit more transition time between changes.

Anything specific I should be doing at this point in time besides maybe being careful with the watering?

The light is somewhere between 3 or 4 ft away from the canopy, should I lower the plants a little bit and slowly bring them back up?

I feel like there still something going on. I transplanted from 2 gal to 5 gallon fabric pots on February 9th and they are showing the same twisting/curling and what looks to me like light stress.

The light is still set to 30%, photone app reads 375 ppfd at the canopy.
