My brother lives on the other side of the road and he's agreed to water my plants while I'm away.
I was thinking of filling up a few water bottles, correct the PH level to the usual value (around 6.1 in my case) and leave them somewhere for my brother to water the plants.
Now... will that bottled water keep its PH level indefinitely?
Will it go up or down with time (will keep the bottles in a dark place)?

Very much depends on the water makeup but no it wont hold its PH indefinitely. How long is a more appropriate question.
Personally id just teach him how. Only takes a few seconds. My daughter that could kill a cactus looked after my grow for 2 weeks with a little direction and swear she did better than me
