To Harvest Or Not To Harvest

It has been three weeks since I had the Catapillar problem you all helped me with.
I managed to get rid of the trouble makers.
Now my question is, Should I start the Harvest or do I wait another week?
I have included some pictures. They are from various plants. 9 different plants total. My 10th one which was the tallest, isn't going to make it.

I did, clear at the moment on most. Some are starting to color
