As for a strain I usually try to see what would work for my weather humid or not and high temps idk about south Australia but I do know that in South Africa they grow some real Durban poison idk if your temps are similar
Soil prep is going to be absolutely key for you, and look for something with high pest resistance or easy to grow for beginners.
The more effort you put into your soil in the months leading up, the more you'll reap the rewards.
