Know shitFor "indefinite storage" I drop a #4 Bovida pack in a half gallon wide mouth Mason jar filled only half way, vacuum seal it and keep it in a dark cabinet I only open when I'm replenishing my daily use jars. I bought one of those sealing kits that works with a Food Saver but really it's easier to just suck the air out the hole of the sealer lid. They sell vacuum kits online for about $10-15. Once I'm done curing and burping I store it under vacuum.
i feel for ya man, it’s a rough life, the shit we did would NEVER fly today same here minor on a Roof hell I was setting the trusses he was friends with everyone I got to know everyone from building inspectors to homicide detectives met people worth billions, my childhood home was 3,000sq ft with a 3,000 Sq ft garage in the back that we ran the company out of, he built the house in his spare time would never lay his guys off, if no work had them do…anything to keep their paychecks coming even out of his own pocket, had anywhere from 15-20 people working for him, half were family from the old country, all spoke Italian, fuckin uncle told me about working for Mussolini in the coal mines at 12 years old at gunpoint for bread and cheese, (shit, almost like me huh hahahaha) my family immigrated here and into canada and ended up here eventually in the USMan I'm having one of those moments. My dad also did construction (just a grunt, not an owner) and used to take me to work during summer vacation because they couldn't afford a babysitter. It was either with him onsite or with my mom at a pet store.
All I was allowed to do was install doorknobs at first and eventually was allowed to nail shingles when I got older. That would never fly today. A minor on a roof hammering shingles for free (or with pay) would get shut down quick. I don't remember getting a cent from anyone, no allowance, etc.
He eventually fucked off to Washington and became a park ranger then left everything to my step sister when he died of covid. I didn't need anything, but the idea that he thought that little of his biological kids who he abandoned pissed me the fuck off. It also pissed me off that he had my grandfather's gun collection that should have gone to his sons. Some of those guns were in the family for generations. Step sister never contacted me again after that. Fuck 'em both and my idiot family members who think he was the greatest.

I think it made me more mechanically inclined. Being around all those tools and being shown how they work and how components go together. Later in life I got into industrial maintenance where I repaired and rebuilt cup formers. Then moved on to Tetra Pak machines that were like some Star Trek shit. Still have pics of those on my Onedrive.

And for sure the skills I learned in those years made me how I am, refuse to bring my car in for work gotta do it myself house maintenance, just life in general, I’ve never had anyone do anything For me before I’m just used to doing it on my own / with the wife… we’ve always just, figured it out on own own lol but that’s why we live like we do now with growin all our own food and my weed and making all homemade food and desserts and breads, hell my wife even gets local milk and makes our own yogurt… basically everything lol but we love it
That garage I talked about is still holding the whole companyYep. I'm still building my power tool collection. I don't think that ever ends. With youtube you can tackle things you've never seen before if you have the right tools. Most things are easy enough to figure out and others can throw you for a loop.
