I use to hunt with a guy who had pigs, he’d take one in the middle of winter to take advantage of the natural refrigeration. Well he took down a huge one a few years back and it was an 800 pounder. That thing was as big as a full sized entryway door, and I remember that because he was literally using a steel door on cement blocks in his garage as his butcher block. I don’t think he anticipated the amount of work that he cut out for himself, letting that pig get so big, but had it not been so cold he would have lost most of it to spoil.
 
Yeah I’ll be picking up some sauces for sure. My wife is the real cook though. That woman will make a sauce from scratch! I can’t wait for what she has planned: )

I sorta made up my recipe for this pulled pork.
3 lb pork
1 cup of orange juice
1 cup of pineapple mango juice
1 bottle of sweet baby Ray’s honey chipotle bbq sauce
1/2 cup of brown sugar
1/2 cup of homemade taco seasoning
6-7 cloves of garlic inserted into the pork
Can of pineapple with juice
1 Orange
Pork was rubbed down after garlic was inserted into knife holes with mixture of brown sugar and taco seasoning
Seared on all sides in cast iron pan (gets ultra smokey)
Remainder of seasoning and brown sugar are added to liquids and mixed thoroughly
Pork was placed in crockpot and sauce poured over it
Pineapple and orange slices surrounded the pork
Slow Cook in crockpot at lowest setting for about 16 hours
Remove pork and pull it apart
Sauce was strained back onto pork and then set back in crockpot on warm setting

I really like the sound of the garlic and taco seasoning! It all sounds awesome but that garlic and taco seasoning😳 so intrigued! Will absolutely try this on one! It sounds like it will be really sweet? How’s the bbq flavor? : )

So when I see something I like on here I will bookmark it. It saves the post for you and you can assign it a title. It came in handy the other day when I was trying to find a cannabis nutrient chart that @Captspaulding had posted .
The bbq has a base to the whole thing the so it’s there but underneath so many other flavors. Garlic is slight, but detectable, taco seasoning is present in sauce and meat but not entirely as taco seasoning because it was 1/2 brown sugar on the searing part it just burnt and turned black but in the sauce it got busy with all the flavors and well now there’s the sweet stuff from the brown sugar, orange and pineapple honey chipotle bbq and the juices too. I’d only change the searing method and leave the brown sugar out and do straight taco seasoning. Besides that it’s pretty pretty pretty good 🤣

One thing I hate about all these digital hygrometers/thermometers is they give different readings. Got the inkbird to kick the exhaust on at 58%, yet the hygrometer inside says 62%. I'll just call it 60. 🤷‍♂️

It's just a closet with sliding doors but they have gaps so it's not very contained. Put some panda plastic over the doors and stuck a zipper on it with an inline fan at the bottom to push the air out when it gets too humid. In a perfect world I'd be drying them both in the tent instead since it's already set up for all that.

I may play around a little with the BBQ sauce and brown sugar. im all in with the garlic and taco seasoning though! : )
