You don't "lose" a week. your weight/day over all catches up. Topping creates more primary budding sites, providing a more balanced place for the resources of your larf buds, once they are trimmed, which is a portion of the SOG idea. Many plants, less on the bottoms, dense full flat canopy.
Your plants are stripped of their engine for making bud. Way way too much is being taken off.
Possibly a good target weight is the 1oz per plant point. Once you're there or close you start training more and working at 2-3oz, or even more (indoor). My first couple around my restart point struggled with iirc like .7 and .9oz with bad density. That was after a 6 gram wonder with decently dense bud.
So you've got a lot to dial in. The pictured ones are 2 grams or so.
