Personally I don't ever water with just DI, though I use it exclusively to mix for normal fertigation. If my plants looked thirsty then I would just do an extra fertigation event.

Dont worry about it. I use full DI and once I figured out how to mix correctly the swings were greatly reduced. A day or two isnt a big deal at all. My reservoir goes 12-14 days or more, thats when its a headache.

Really like how you shaped the plant to the trellis. I like my PH closer to 6.0 and I like it to not change much between fills. My whole run I like to mix and fill to the same PH. Yours have great color and minimal browning on the tips - looks good to me.
