You can root in plain water just fine it just takes more time is all. I do it all the time, I like to throw a collar on the cutting and put it in a solo cup of plain water. I had a friend that lived in a jungle house, everytime we'd go anywhere she'd take a cutting off plants in restaurants, offices, airport, schools, anywhere she saw a plant she liked she clip it stick it in her purse then at home she'd it put in a cup of water and it would grow roots, I have one in a gallon of water now just for fun to see if it'll reveg.....an auto.....lol.....not likely but I'll let her sit and we'll see..........You're cutting looks pretty sad but they're tough little things and with a root starting who knows

My tap is around ph of 8 so tap may be just fine. Mine do tend to lose a leaf or 2 before they really root. Make sure to keep them under a light and try and keep humidity high, that should help. You can also use a super low EC nutrient water.

How does that not mess with their iron uptake? I'm pretty sure that's what caused me to lose a plant so fast that was otherwise healthy when the first heatwave rolled through SoCal. The soil got too warm, lost oxygen, and since the soil pH was already too high from the water, she completely locked out. Flush and transplant made zero difference. So lll just finish these out and wait for next year's drops. Light isn't an issue. These were 24/0 until 2 days ago. Thanks for the advice

Roots grow for lack of water. An abundance slows down this process. Keeping the RH 100%, with a moist plug/soil/medium will grow roots quicker. If you keep the stem submerged in water it has no signal that says "gotta grow roots before I die"..if that makes sense.
