Hi, so I am familiar with the volts x amp = maximum wattage. My grow room output is 30v, however the maximum amp is 125. This would make my maimum wattage 3750. From what I was aware, the voltage is normally much higher than the amp. Is 3750 the correct number?

What lights are you running and what is your panel capacity?

I was under the impression that the number on the electric panel was the voltage. I may be wrong. Is it the amps?

It sounds like you have 120v with 30 amp Breakers and should stay around 2000 Watts but I'm not an electrician.

A 15 amp circuit nets out at (120x15)x.80=1,440 watts, 20amp circuit usable wattage (same calc, just change the 15 to 20,) (120x20)x.80= 1920 watts. If your using two pole circuits (240 volts) calc works likewise, just change the voltage to 240. (The .8 multiplier is for continuous use.)
To figure what each component is using you'll need some type (kill-a-watt) meter, that measures both parameters, and assuming you don't have access to amp meters and volt meters.
Everyone's usage has many variables, you'll have to do the leg work to figure yours out.
