I noticed there was only like maybe a couple amber trichomes here and there. Not even maybe 2-3% yet. I was going to give it a few more days and then probably chop. What do you all think?

If you see amber, your eyes are better than mine because I didn't find any in your pictures. I would wait a week, possibly 10 days depending on what your trichomes look like. Check them regularly ... I harvest mine when I think it looks like 10% amber. Others like it with less or more amber. It boils down to preference ...

I agree looks like it needs just a bit more time. You clearly have a way to look at the trichomes so keep that up. The flowers themselves look about as matured as they are going to get.

A week or two, the buds could swell a bit more, but they are looking really good!
