Cold temps at near harvest?

Is purposely chilling your plants before harvest a new technique I haven't heard of? I know you can stimulate color change with cold but I've never heard of using it to effect your quality.

Hard to say, there is so much bro science out there I don’t think most of it has anything to back it up.
