Defoliant confusion first photo attempt

This is my first photo Ive grown on day 28. I’ve been going over defoliant techniques and now slightly confused. should I only be removing 3-4 leaves at a time or 10-15 % per session? Reading different things and now confused. Any help clarifying this would be appreciated.

Yeah that is an awesome video. I've seen that several years back, but still worth watching again.
