Did I trim/defoliate my plants too much?
Let me know if I need to trim some more

The defoliating you've done looks good to me. You cleared out the center, and that's good for air flow. If they were mine, I'd probably leave them alone for a week or so to see how the plant does. It's not likely to make many more fan leaves.
