Don Carlos out growing it’s outdoor space

Don Carlos (Humboldt) started seed on 4/28/25 , then planted seedling outdoors on 5/19/25 . Put up green house roof panel on 6/3/25 over plant.

I bent over branches once, but they are now tall enough to be touching green house roof plastic.

I have 3 options as I see it.
1: bend over branches again
2: raise roof
3: top branches

It seems if I try to bend over branches now, there is going to be a lot of congestion between branches. I definitely don’t want bud rot.

So I’m thinking of raising roof park higher.

At this point in central illinois, I wonder how much taller they are going to get?
