Ether will knock you out, and very flammable and explosive if memory serves.

Diethyl Ether, used in the past for surgery, is also on the DEA watch list, because its used to manufacturer other drugs.

Dimethyl Ether doesn't appear to be, but as you note, both are highly flammable.
