Bought a 10lb bag of chicken quarters

Not fully cooking on the grill just want that flavor. We'll put them in a pressure cooker for 30 minutes and then shread the meat and freeze for later.

Sitting in the patio puffing a J and smelling that BBQing chicken😍
 
Leftover tortellini chicken spinach cream sauce & leftover Black Forest ham and cheese wrapped in pastry and leftover beef and cheese in egg roll wrappers. OMG! My wife is amazing💘

Some roast chicken breast.


2 chicken breasts (10-12oz each)
8 cloves garlic
1 medium onion
1 pepper
Herbs and Spices (pinch each and ground in mortar & pestle):
  • Dried Chipotle pepper
  • Crushed red pepper
  • White pepper
  • Cayenne pepper
  • Smoked paprika
  • Paprika
  • Basil
  • Oregano
  • Rosemary
  • Parsley
  • Sage
  • Marjoram
  • Salt
Oven 425f 40-50 mins
-Grate 4 garlic cloves and rub with the spices into the chicken breasts to fully coat.
- cut the onion and pepper into chunks and place at the sides of the chicken along with the remaining 4 cloves of garlic.
- give it a healthy pour of olive oil and spread about 2tbs butter around the top

Outstanding tumble, gonna have to give that one a try!
 
Yesterday made a beef roast which we ate last night with sweet potato. I inhaled it. Normally we'd go to tacos but I had got these Kaiser Rolls so I browned them in butter while heating the meat with Ray's BBQ sauce and my wife made potato salad so before I inhale this plate of food...

Last weekend I started making a lactose fermented green hot sauce with a pound of each Jalapeno and Serrano peppers, purple onion and garlic in a weak salt solution

They need to be in and under the top of the solution to avoid mold growth and spoiling. There are jar lids made for this purpose but my little cheaters work fine.

Our cheap ass blender keeps overheating and shutting off. I still need to add 1/2 tsp xanthan gum to keep the sauce from separating. Still tastes incredible with the perfect spicy heat for our tastes😘
