Course Requirements:

Have completed the following courses from “The Core Program” of the Biology discipline: BIO101: Introduction to Molecular and Cellular Biology, BIO101: Lab, BIO102: Introduction to Evolutionary Biology and Ecology, and BIO102: Lab.

Definitely was interested till I got to the above.

I think MIT has a botany course on their Opencourseware site as well. I'll see if I can find it and link it up here.

EDIT: http://ocw.mit.edu/courses/find-by-topic/#cat=science&subcat=earthscience is the general area that seems to contain the most interesting to us. Third course down, Course #1.361 Advanced Soil Mechanics seems immediately of interest.
