Set ur chiller temp to whatever it takes to maintain a 62-64 system temp. With the 8gals, watch for decreasing water levels in the farther buckets from Epi during late flower.

Great grow man. I think you could achieve better air flow and cooler temps if you repositioned your hoods and the ducting on them. Seems like the current set up would cause a lot of resistance and reduced air flow. I think having the hoods hooked up to a fan w/ a "Y" fitting and having the hoods in a wishbone pattern would create better air flow through the hoods. Just my thoughts. Good luck w/ your UC adventure.
What size fan are you using to cool the hoods? Where are you pulling the air from? Used to run air cooled hoods then I went totally closed loop w/ proper ac and never looked back.
I think one of the problems is the ac's you are using. Those just don't cool like we need them to. At a minimal I would wrap the condenser exhaust line w/ insulated ducting to prevent it from heating the room. You have put so much loot into your grow this far, I would invest in a quality mini split ac. Sun Light Supply has some quality plug and play (pre charged ac's) for a reasonable price.
