So my outdoor ladies are enormous and I'm going to have to use the garage to hang dry them all. The garage isn't climate controled however and by early November the night time temps will be below freezing.

Will my freshly plucked nuggets freeze while they're in the garage and if so what will happen to them?

Thanks!

The freezing temperatures will rupture the individual cell walls of your plants. After that, the molds, mildews, etc. will gain access through these ruptures. The resulting process is necrotic rotting as the daytime temperatures rise into the acceptable range. Though proper air circulation can allay many of these problems, there is no real way to avoid them completely if your plants are allowed to freeze and thaw.

I'd do what is necessary to avoid the freeze. Creativity is the finest virtue to hold, next to patience.
