like someone else have said, it look like it's leaning toward sativa, also i would say you could have waited longer before the chop.

It is sativa-leaning, you are correct! There's two (I was told) are Hawaiian Skunk. Going on leaf-shape alone, one appears more sativa-leaning and the other more indica-like, I suppose.

Can you tell me please why maybe I've chopped to soon?
And like, what are the signs that indicate to you this?

i'm overall seeing more dried leaves than swollen calyx inside your buds, wich aside the fact it's leaning towards sativa and eventually the phenotype suggest you've probably harvested too soon.
