With your set up it sounds like 10 to 12 plants in 3 gallon pots.. That seems to fit your description of your grow style..I think with proper training you could hit 3+ per plant
I would go with what Zoolander suggested.. I think less plants = less work and more time with each plant.. I know of folks that run scrogs and pull 10+ oz a plant consistently in 5 gallons but they also veg for 6-8 weeks.. edit.. just realized you said these were going to be in coco you can veg shit really quick in coco if you get it dialed in..
