How to harvest twice?

Hello dear farmers! I`m completely newbie. I`ve got some outdoor. How to harvest it twice I meant first the big fruits and second the rest.
First (1-2 Oct) Second (15-17 Oct).

The only way to go would be to take off the buds as they mature and see how you go, but in most cases, buds mature at the same time. I've never tried this, so I'd be keen to see how you get on.

so, looked up staged harvesting. Because thats what this is. Also for two full harvest can light early to get july sun harvest and then light dep again for oct harvest
