Dont the nanners have to open up to release pollen ? I'm debating if I should just say fuck it and harvest them.

No nanners don’t open any further. And they pollinate even without bursting out like little bananas. If there are nanners everywhere harvest asap.

Yeah in the second pic the plants look pretty stressed out and nutrient deficient. Also some of the sugar leaf looks quite yellow/brown going into the bud. Might want to give those small leaves a tug and make sure there isnt any budrot going on in there.
