When the roots become very large how much water/space should be in the reservoir to prevent drowning

you should have an airstone then you wouldnt have to worry about that. or try the kratky method part of the root is not underwater.if i remember correct that one dude i met here did daily a few L refils

"drowning" happens when there isn't enough air available to the roots, not when there's too much water. Basically what @amneziaHaze is talking about.

So the lower half can be submerged in water and the top half gets oxygen and that's enough to not drown the lower

Not really as it sucks water top gets wet.you have to put new water in there.
Find the guy that grows kratky he has a diary you can learn his tehnique.
I dont like it but he managed to get it to work. I beleve an airstone will give you even more growth
