Plants finishing while I’m away at work for 2 weeks

Ok my timing is off I think.

I work 2 weeks on and 2 weeks off.
It’s looking like my plants are going to finish at the start of my work shift.

I can’t trim them until my two weeks off. What can I do in this situation other than let them grow for two extra weeks and get tons of amber trichs?

harvest whole plants and hang and lower the temp you can make it take 14 days to dry.

Slow dry or just harvest and stick it all in the freezer and make dry ice hash when you get home
