question about defoliation from a rookie

hello yall, i am hearing that defoliating after a certain point in flower is not good for the outcome of the plants and i was wondering.. a) at what point is it that you should stop? and b) is picking off all the dead and nearly dead stuff off as it forms during flower fall under that defoliating or since those leafs are depleted does picking those off not matter? thanks in advance for anyone willing to answer this for me.

I pick off any shaded leaves and dead or dying ones mostly in veg but up to the first 2-3 weeks of flower.

Pick off dying leaves to your heart's content.
