Question about Ebb and Flow(cubes)

I am running the flood and drain system.

As you all know you need grow cubes to put your plants in, as they grow bigger you need bigger cubes. Right now I have them in the 2nd size cubes(cant think the dimension off the top of my head but they come in 3 sizes, the size for clones, teens and fully grown). I was thinking....can I just put down coco mats now while their in the medium sized cubes instead of buying all new large cubes or will this hinder their growth?

I've seen people put plants in rockwool into coco slabs, but that was with a drip system DTW. I've also seen people use coco with an ebb n flo table, but I think he said he top feeds once a week or something to rinse out the salt build up.
