Roots Showing

New grower here. In most of the pictures I see what looks like white gravel sprinkled on top of the soil in the pots. I tried searching, but can't seem to find any info on this. I noticed roots showing at the surface around the trunks after watering. I was going to add a couple inches of topsoil to the pots, but would love to hear some suggestions. I don't want to cook the roots.

It's perlite, you don't really need it. Don't worry about roots showing through, the plant comes preprogrammed to handle that sort of stuff.

Yes, but it's usually a brownish color, right? I've never seen white vermiculite.
