Rosin pressing question

I just got a rosin press, have been looking up everything I could, and watching all the videos that aren't behind an log-in wall. But one question I can't seem to find the answer to: When setting temps are you adding the plate temps together or not? Do I need each plate at 100f to press at 200, or both at 200? Most of the videos they say set the temp at a certain level, but never show it. Saw one last night and the guys did 90 each, but they seemed like idiots, weren't using rosin bags, and their results looked horrible. Thanks
